Grilled Haloumi with Chicken, watercress, beetroot and citrus salad

This salad is rich in protein, from the chicken and the halloumi cheese, which not only supports muscle repair and development, but is an important nutrient for bone health and the immune system.

The halloumi contains calcium, which is a key nutrient involved in building strong bones. The vitamin C from the citrus fruits and the anti-oxidants in beetroot supports wound healing and the immune system.

Ingredients: Serves 2

  • 1 pack of halloumi sliced into 8
  • 2 cooked beetroot and sliced
  • 1 breast chicken cooked and sliced
  • 1 bag watercress
  • Juice and zest of 1 lime
  • Juice and zest of ½ lemon
  • 1 tsp. honey
  • 1 tsp. soy

Directions

In a bowl combine the juice and zest of the lemon and lime, along with the honey and soy and mix well to make a dressing.

Now place the halloumi under a very hot grill and cook until browned on both sides. Into a large bowl combine the remaining ingredients and halloumi and toss.

Now add the dressing toss the salad again and serve.
